Grilled Vegetables with Lemon Olive Oil

Ingredients

    1 medium zucchini (sliced into rounds)

    2 tbsp Lemon Olive Oil

    1 small eggplant (sliced into rounds)
  • Ingredient icon
    1–2 tomatoes (cut into thick slices or wedges)

    Salt & black pepper to taste

    Fresh herbs (optional: parsley, basil, or thyme)

Directions

1. Preheat a grill or grill pan over medium–high heat.
2. Lightly brush the zucchini, eggplant, and tomatoes with Lemon-infused olive oil.
3. Season the vegetables with salt and black pepper.
4. Grill zucchini and eggplant for 2–3 minutes per side, until tender and lightly charred.
5. Grill tomatoes just briefly—about 1 minute per side—to warm and mark them without losing their shape.
6. Transfer everything to a serving platter.
7. Drizzle with extra Lemon-infused olive oil and sprinkle with fresh herbs, if using.
8. Serve warm as a side or light main dish.
